  4. Slice peppers into rings, remove seeds and place rings evenly on top of pork loin.
  5. Mix BBQ sauce and crushed pineapple (including juice) in bowl and pour over all.
  6. Cover dish with foil and cook for 45-60 minutes at 350 degrees until thickest part of loin reaches 145 degrees.
  7. Let rest for 5 minutes, slice and serve over prepared rice.
